Start by preparing the rice. Cook it half way trough,it will keep cooking later in the peppers
Chop the onion (you can grate it too)
Grate the carrots and chop the garlic
Pour some Canola oil in
I use a cast iron pot because they keep the heat better, but you can use a regular one
Stir in the onion, carrots and garlic cloves
Let it cook a bit until it softens up
Add the rice and veggies in a bowl
Stir in the meat. Add a hand full of chopped cilantro, I forgot!
Don't by shy with the salt. The mix needs quite a lot.
Stuff the peppers and place in pot
Chop two tomatoes
Add in the tomatoes, paste and salt & pepper
Add water almost to cover the peppers, just as in the picture
Bring to boil and then cook on low heat for 30-45 minutes
Add the sauce to the peppers while cooking
When serving, open the peppers up and add in some sauce
