How to cook curry chicken when you don't feel like cooking

Season your chicken parts with bottled green seasoning or fresh seasoning. Anything kinda spicey and herby. Leave it for a while to marinate. Tip: you want bone in skin on chicken. More flavor.

Chop garlic except for 4 or 5 cloves. Chop shadon beni (cilantro) too. Put the hot pepper close by to make onlookers think the curry is going to be good because it's colorful. Yuh don't have to but...

Put some oil in a pot over high heat and fry garlic until the garlic is burnt all over. As a guide, leave it until you think you're burning it too much, then leave it for 2 or 3 mins more.

Take the burnt garlic out of the oil. No pics of this because at this point the oil is hot, so you have to move quickly. Get a very heaping spoonful of curry powder...

Add it to the hot oil. Make sure all the powder dissolves into the oil and fries up well. Curry that isn't cooked well can cause a serious problem in the belly if yuh know what ah mean.

Put in the rest of the chopped garlic and half of the shadon beni. This portion of garlic isn't for roasting, so it doesn't have to stay in long.

Add the seasoned chicken. If it doesn't go "shhhhhhwaaah" something is wrong.

Mix everything around. Make sure all the chicken gets coated with the curry mixture. Let it cook for a bit. Observe the color change. Meat should start getting darker.

Get the massala...

And the roasted geera...

And put just a touch to taste.

After cooking the meat for about 3 or 4 mins add the other half of the shadon beni and mix that about.

Oh yeah... Salt and black pepper to taste. What does that mean anyway? To taste. It's food. Everything is to taste. But anyway...

Add hot water to the pot. Make sure it's hot water so you don't stop the cooking process. Just put enough water to cover meat. Add the hot pepper, reduce flame to medium and cover for 5 to 10 mins.

Take the cover off and allow liquid to bubble down to the desired amount of sauce. You can also burst the pepper at this point if you want some heat, leave it in for more spicey flavor or take it out.

Serve hot with dhalpuri, rice, paratha, sada or whatever else.
